Decorating Your Christmas Cake

I'll be honest, I haven't been feeding my cake anywhere near as much as I should have. Oops. At least I can still make it look pretty. Check out some ideas for your cake this year.

My new favourite is from Delia Smith's Waitrose Christmas Cake mix this year. I love the silver balls sitting inside the icing! Check out her video on how to ice your cake to look just like this here!

Blake's Back In The Kitchen

Our favourite Gossip Girl, Blake Lively, just can't get enough of baking. We've already seen her pictured creating cake pops with none other than Bakerella's Angie Dudley and with Christmas just a week away, she's been back in the kitchen.  This week, Blake dug out her festive threads and paid a visit to New York's Sprinkles Bakery to bake some of her upcoming S'mores cupcakes.

The 'Green Lantern' actress, who has made it no secret about her love of baking, co-created the S'mores cupcake with the Sprinkles Bakery founder, Candace Nelson. They will be available in early January and all proceeds will go towards Oxfam’s Somalia famine disaster fund.

Amanda Seyfried Goes French for 26th Birthday

Check out the Birthday cake presented to Hollywood starlet, Amanda Seyfried, earlier this week. The actress with in New York for the unveiling of Clé de Peau Beauté’s Spring 2012 Collection where she was given the huge cake. As a massive fan of Paris, thème française cake is not something I would turn my nose up at. However, that Eiffel Tower needs a little work. F&F - take note.

Delia Smith's Christmas Cake for 2011

YouTube is a godsend for everyone really, isn't it? Last year we posted Delia's step-by-step pictorial guide to icing your Christmas cake (see post here) and this year, she's embraced the digital age with a video how-to. hurrah!

Santa's Brownies


I'm always one for novelty edibles (see: Our First Wedding Cake) so when I discovered these inventive treats on Daisy's World I decided to definitely give them a go in time for the festivities. I'm not going to lie - my Christmas schedule probably won't allow the time to bake the brownies myself and I may do a 'Loraine Pascale' and go 'shop-bought' (no, nothing to do with pure laziness AT ALL).

I may even opt for Marks & Spencer's marzipan strawberries as if they weren't festive enough! However, there are rumours flying about that M&S have discontinued their marzipan fruits range...

Mary Berry's Tarte Au Citron

We ruddy loved the Great British Bake Off Masterclass shows, probably more so than the Bake Off itself.

You can get the recipe from BBC here although I decided to follow Mary Berry's video clip by clip and noticed it differed to the online recipe slightly. Determined for my tarte to turn out as perfect as possible, I followed the video!

My pastry did collapse crack and break off when allowing it to hang over the edges of the tin so I would suggest putting a baking tray underneath the pan to avoid scrubbing the oven. It will also help is you put the pastry in the fridge to chill before lifting up the sides.

We've managed to get our mits on pictures of these Breaking Dawn Soundtrack cupcakes made especially by LOLA's Kitchen. yum!

Dr Oetker's Very Lazy Icing

VERY lazy but to be honest, I'd probably buy myself a bottle of Dr Oetker's new Easy Swirl Cupcake Icing, it clearly doesn't take much to sway me.
Available in Vanilla or Chocolate flavour, not only is this buttercream icing ready to decorate, the top of the bottle is equipped with a ribbon effect piping nozzle (just in case you couldn't be bothered to transfer the frosting into a piping bag).

As a serial baker, it would be more economical and cheaper to use an icing bag and your own choice of nozzles. However, as part of a one-off baking sesh, this product could be very convenient - we all know how much of a nuisance it is to clean a piping bag and nozzle full of excess frosting. At priced just £3.49 per bottle, it's definitely worth it if you're short on time.

Your Christmas Cake Made Easy

Last year, we were so excited to learn that Delia Smith had teamed up with Waitrose to bring us lazy bakers a cheat guide to your Christmas cake (see: Oh Christmas Cake). This year, we've noticed that Delia's changed up her christmas cake package slightly and opted for a compact box. I'm guessing this might have something to do with Mary Berry's brand new Christmas cake mix from Tesco (gasp!). Not only does Mary Berry's mix look almost exactly the same as Delia's last year, she's also offering up the icing sugar, marzipan and apricot jam - all for £10 - the same price as Delia's.

To rub more salt into Waitrose's wounds, Mary Berry and Tesco have gone one step further and released a 'Spiced Fruit' cupcake mix with brandy butter frosting all for £5.

While Waitrose are currently airing a festive TV ad with Heston and Delia showcasing their christmas culinary delights, Tesco have released and in depth 'How To' video with step by step instructions hosted by Mary Berry herself.

Celebs Channel Katy Perry for Children In Need

Stars such as TOWIE's Lydia Bright, Alesha Dixon and Jo Wiley have all entered a fantasy world filled with giant cupcakes and doughnuts a la Katy Perry's 'Calirfornia Girls' as part of this year's campaign for Children In Need.

The campaign, which sees the celebs swinging on giant candy canes and scoffing gingerbread men, is to help encourage people to bake treats to raise money for this year's appeal.

Nigella's Lemon Syrup Loaf Cake delicious! It was baked down here at the Winkwell over the weekend and it was scoffed very quickly - and TWO loaves had been baked.

The recipe is by Nigella Lawson:

For the loaf:
125g softened butter
175g caster sugar
2 large eggs
zest of 1 lemon (preferably unwaxed)
175g self-raising flour
4 tbsp milk

for the syrup:
juice of the lemon
75g icing sugar

  • Grease and line a 2lb loaf tin (23x13x7cm) with baking parchment - this is a very moist and sticky cake.
  • Preheat the oven to 180C/Gas 4.
  • Cream together the butter and sugar and then add the eggs, beating them in well. Add the flour and lemon zest and fold in gently but thoroughly until well mixed. Add the 4 tbsp milk and mix well. 
  • Spoon into the loaf tin and smooth the surface. Place into the oven.
  • While the cake is cooking, make the syrup. Place the lemon juice and icing sugar into a small pan and heat gently until the sugar dissolves 
  • When the cake is cooked stab the cake repeatedly, all over the surface and right down into the cake. This is good fun! Carefully pour the syrup mixture over the cake, trying to make sure that some is absorbed in the middle of the cake, rather than just running down to the edges of the tin. 
  • Leave in the tin until completely cold, then carefully remove and slice.
*The custom drizzle was made from lemon juice, water and icing sugar.

First Look: Kim Kardashian's Wedding Cake

Yesterday afternoon, Kim Kardashian tied the knot with basket ball pro fiancee, Kris Humphries, in front of an A List audience. 

Judging on the first photos published today, Kimmie clearly doesn't do things by halves at what's dubbed to be the event of the summer. Even the black and white cake is something to shout about. Enough for 440 guests, the grand wedding cake was placed right at the entrance of the huge marquee. 

Competing with Wills & Kate's design from earlier this year, the ten tier (!) cake included black layers to match the wedding's monochrome theme. Check out the first picture below!

LOLA's Chocolate Sundae

Central London bakery, LOLA's Kitchen launched their new flavour Chocolate Sundae a couple of weeks ago. A fudgy chocolate brownie cupcake topped with a scoop of vanilla pod buttercream; finished with chocolate sauce, chopped nuts and topped with a glacé cherry.

well, not quite, but rice krispy squares! I used to love these in my lunch box (cheers mum) and at the parties.

Krispy Kreme's Summer Collection

Firstly, I knew about a couple of these new limited addition flavours a few weeks back but failed to realise that they were a part of Krispy Kreme's Summer Collection (I'm ashamed of my lack of cake knowledge!).

Although what's left of summer is almost over, at least these three mouth watering flavours are going to be available until 11th September so there's still enough time to get your mitts on them! The limited edition collection consists of Coconut Ice, Creme Brulee and Mango & Passionfruit Cheesecake (I've tried and tested Coconut Ice and it was very scrumptious indeed!).

Krispy Kreme’s Summer Collection will be available in all Krispy Kreme UK stores and cabinets from 2nd May until 11th September, priced at £1.55 each or available in a Dozen of your Favourites for £9.95.

Dunelm's Cupcake Decoration Creations

Remember the Giant Cupcake tin? Although we loved having a huge cupcake for Birthdays, we found it difficult to remove it from the tin. Now, Dunelm offers a silicone version which promises to be the 'perfect baking accessory'. Made from flexible, non-stick silicone, the big top cupcake allows you to make extra big cupcakes in two different sections. By using the 2 separate moulds, you can mix and match different flavours to make one super tasty, unique cupcake. It also comes with an easy-fill insert to add cream, fruit, ice-cream to fill your cake (not sure how it works but I'll go with it). Priced at £19.99, it's also cheaper than the original tin which retails at around £30-£35.
